Poached Haddock with lemon cous cous

Serves 2

Ingredients
2 Haddocks fillets
2 Gloves of garlic
Grated Ginger
Grated turmeric
1 Red pepper
1 Green pepper
2 Shallots
8 Chestnut mushrooms
2 Large handfuls spinach
1/2 cup of cous cous
1 Lemon

Method
Poach haddock in 1/2 cup of milk with the garlic, ginger and turmerric
​
Pan fry peppers adding the mushrooms and shallots over a low heat. Add the spinach once cooked
​
Put 1/2 cup of cous cous in boiling water and let it stand
​
Mix fish, vegetables and cous cous together spueezing lemon juice over it
